Exploring Central
Central, founded in 2008 by Virgilio Martinez, offers contemporary Peruvian cuisine with fresh and local ingredients. It highlights unique flavors of Peru: Coast, Andes and Amazon.
The tasting menus are designed by Virgilio and Pía León, co-chef of the restaurant. Their approach fuses modern and traditional techniques. Showing a focus on the use of fresh, local ingredients and the introduction of little known indigenous ingredients from Peru’s coastal region, the Andes and the Amazon jungle.
Experience territory in unevenness
The first proposal, “Experiencia territorio en desnivel”, takes diners on a journey through 12 Peruvian ecosystems. Each dish is carefully prepared with local ingredients that represent the culinary richness of each region.
For example, in “Sacred Valley” you can taste ingredients such as cherimoya, cedron and cauliflower, while “Extrema Altura” explores corn, kiwichas and coca leaves. Each culinary experience is unique and reflects the deep knowledge and respect the chefs have for Pachamama and its products.
The menu can last between 3 and 4 hours, immersing diners in a sensory journey. It is an educational and exciting experience that allows you to discover the gastronomic diversity of Peru in every bite.

Mater World Experience
The adventure begins with “Rocas Negras”, where you can enjoy delicious snacks such as yuyo, clams and squid. Then, we move to the “Dry Valley”, where the fresh flavors of shrimp, loche and avocado are waiting to delight us. Continuing our tour, we enter the “Selva Alta”, where cocona, potato and yacon surprise us with their exquisite combination.
As we ascend to “Extrema Altura”, we find corn and kiwichas that comfort us in the heights. But the journey does not stop here. In “Cold Sea” we can taste murike grouper, razor clams and vóngole. With “Conexión Amazonía” and “Aguas de Amazonía”, we dive into the flavors of the jungle. While in “Suelo de Mar” we enjoy shells, sea bream and cucumber, reminding us of the importance of the seas and oceans.
